GMP Recruitment are delighted to partner with a beautiful 4-star boutique hotel and 2-rosette restaurant set high above the Stroud Valley. With 18 individually designed bedrooms, a private lodge, and breathtaking countryside views, this is a property with genuine character and ambition.

My client now seeking a creative, driven Sous Chef who wants to play a key role in shaping a destination restaurant rooted in seasonality, sustainability, and a strong sense of place. If you’re excited by ingredient-led cooking, local provenance, and the chance to influence a growing culinary identity, this role offers real scope to make your mark.

This postion is working 5/7 Days, paying £36,000-£40,000 + Service Charge (approx £4K+)


Key Responsibilities:

  • Support the Head Chef in delivering a distinctive, values-led food offering that champions creativity and local produce.
  • Build and maintain strong relationships with local suppliers, growers, and producers, reinforcing our farm-to-fork ethos.
  • Contribute to marketing and storytelling, including social content around ingredients, kitchen garden harvests, and seasonal dishes.
  • Lead, mentor, and develop the kitchen team - confidently stepping up during the Head Chef’s absence.
  • Oversee rotas, training, hygiene standards, allergen control, and stock management.
  • Assist in designing new dishes, menus, and culinary events that attract both local diners and destination guests.
  • Take ownership of specific offerings, including our relaxed “Back Patio” dining experience.
  • Run all kitchen sections and lead service with confidence and calm.
  • Participate in Head of Department meetings and contribute to the wider business vision.


About You

  • Passionate about creative, ingredient-led cooking, with a genuine interest in kitchen gardens, sustainability, and local sourcing.
  • Experience in 2-rosette or higher establishments is ideal, but strong candidates from high-quality independents will also be considered.
  • Proven ability to maintain exceptional standards of hygiene, organisation, and stock control.
  • Comfortable working across multiple styles - from refined dining to relaxed fire-grill menus.
  • A natural leader with excellent communication skills and a talent for developing others.
  • Calm under pressure, with a commitment to excellence and consistency.
  • Previous Sous Chef experience is desirable, though ambitious Junior Sous or strong Chef de Partie candidates are encouraged to apply.
